Don’t do too much. Let the fruit do the work. The character of the fruit and the vineyard will step forward. This old-world-style of winemaking comes to mind on the Fine Disregard Semillon, Napa Valley 2018.
Have you had Semillon? Good ones, like this, are waxy in smell and texture with flavors that move from citrus blossoms to dried mango & apple slices to crushed almonds to grapefruit zest. Texture is both creamy and cutting…nature of semillon and the winemaking (2/3 neutral barrel ferment, 2/3 ML). Kiss of tart heirloom apple on the finish. Kudos to Fine Disregard for holding onto this wine and selling it once it’s had time to open up. Semillon needs time in bottle to blossom.
